What is freeze drying and what are its mechanisms of operation?
The fruit undergoes an initial freezing stage at temperatures ranging from -50 ° C to -60 ° C, followed by the extraction of moisture using the vacuum system within the chamber. This meticulous process spans a duration of up to 40 hours. Throughout this procedure, the ice undergoes sublimation, transforming into water vapor.
The Lyophilization process is carried out under carefully controlled drying conditions.
