Lyophilisation, also known as freeze drying, is widely regarded as the preeminent method for food preservation. This technique ensures that products are maintained in their pristine state, devoid of any additives, preservatives, added sugar, or extraneous ingredients.

In the majority of traditional agricultural methods, fruits and vegetables are gathered prior to reaching full ripeness, and before they accumulate a significant amount of micronutrients and antioxidants. Subsequently, they are loaded onto transportation vehicles and transported to retail establishments, where the combination of heat and light further diminishes the nutritional content of the produce.
